Pigeon Pea Hummus Toast Topped with Sautéed Garlic and Kale
I made this dish when I was not documenting my process so I can’t find the exact hummus recipe I used. That said, I think the hummus recipe was very close to the Food & Wine Easy Hummus with Tahini recipe found here: https://www.foodandwine.com/recipes/easy-hummus-tahini. Just replace the chickpeas with dried and then soaked pigeon peas, and also I always use tons of garlic.
I toasted up rye bread for the base and for the topping I sautéed kale and garlic in oil over medium heat. To finish I added salt, black pepper and red chili pepper to taste and then had a feast!
